wash veggies + preheat oven to 400°F

Roast for 50 minutes

Step 3

Combine vegetables + spices in a large stock pot. 

Step 4

Cook / reduce. Bring soup to a boil and reduce for 60 minutes.

The longer you simmer your soup, the thicker it will get!
