PELLET GRILL RECIPE

This simple smoked chicken thighs recipe with crispy skin is the best excuse to fire up your Pit Boss or other smoker. 

PREHEAT

Preheat your Pit Boss or other pellet grill to 275°F..

Key Ingredients 

01 BBQ Rub

02 Olive Oil

03 Chicken Thighs

04 BBQ Sauce

Yeast Package
Flour Bowl
Brown Rice
Dough

Brush with oil, season, and arrage on a grill mat or directly onto the grill grates

SEASON

SMOKE

Smoke for 45-60 minutes before checking the internal temperature of the thighs. Once it reads 165°F, remove them temporarily, brush with bbq sauce, and set aside.

REVERSE SEAR

Turn the smoker up to 425°F. Once it reaches the proper temperature, replace the chicken and cook for another 15 minutes.

Use a grill mat for easy transfer and cleanup.

Tuck any loose pieces of meat underneath the chicken thighs before cooking to avoid burning.

Insert your meat probe far into the middle of your chicken thigh and avoid the bone.

Let the thighs rest for 10 minutes and serve with your favorite smoked asparagus or other side.
