Peel peaches, onions, garlic. Cut peaches in half and lay them on a grill sheet. Remove the seeds + stems from the habanero peppers and place them on a grill sheet.
1. Preheat your Traeger, Pit Boss, or other pellet grill to 250°F. Place the prepared onions, garlic, peaches, and peppers on the grill. Smoke for 30 minutes.
Place remaining ingredients in a large sauce pan including apple cider vinegar, lemon juice, water, brown sugar, kosher salt and dried ginger. When 20 minutes of smoking has passed, start warming your sauce over medium-heat. Bring them to a light boil for 3 minutes.
Add the smoked peaches, onions, garlic, and habanero peppers to the sauce pan. Bring back to a boil for 5 minutes.
Transfer the hot ingredients to a heat safe blender and ensure that steam is able to escape from the lid. Pulse on high until completely smooth and there are separate ingredients visible.
Enjoy fresh or pour the smoked peach habanero hot sauce into airtight jars or containers and transfer into the fridge.
