04 PEPPERCORN

Pat dry with a paper towel. Place wings in a ziplock bag with baking powder mixture. Shake well to make sure that the chicken is evenly coated.
Place the raw wings on the grill and cook for 30 minutes
Cook at a higher temperature to render fat and provide more moisture under the skin.
Make sure your wings are super dry before smoking them.
Rinse wings well under water after brining to rinse any excess salt.
Increase the temp of your pellet grill to 425°F. Cook for an additional 30 minutes or until internal temp is 175°F and skin is crispy!
Season with salt and pepper or your favourite wing sauce. Serve with fresh vegetables and dipping sauce!
