Everything Bagel Zucchini Chips 3 Ways: Oven, Air Fryer, Dehydrator

Dehydrate, bake, or air-fry these zucchini chips to perfection. Simple, crispy, and perfectly spiced with everything bagel seasoning, these zucchini chips are a delicious, low carb snack. This potato chip swap is an excellent way to sneak some additional veggies into your life and to use up the mountains of zucchini that gardeners are blessed with at harvest time. They appeal to most diets including paleo, keto, gluten-free, and vegan. Head out to the garden or to your local farmer’s market and stock up on zucchini for a healthy snack that can be stored long-term.

It is zucchini season here on my Alberta homestead! Zucchini are prolific, taking up a large area in the garden and producing an abundance of flowers and fruit. I love to freeze zucchini and pop it into sauces, salsas, and baked goods. We recently discovered zucchini chips and my whole family is hooked! Key Ingredients

Zucchini- I love smaller zucchini but you can also use big zucchini and remove the large seeds in the middle

Oil- I prefer olive oil or avocado oil for this recipe

Everything Bagel Spice- All of the work has been done for you if you grab a bottle of everything bagel spice from the store. If you choose to make it yourself, this recipe is awesome.

What Are The Best Types of Zucchini For Zucchini Chips?

Any type of zucchini will work for zucchini chips including golden zucchini, black beauty, and midnight bush. Choose smaller zucchini for zucchini chips to ensure that the seeds aren’t too large. If you are using larger zucchini and you don’t mind seeds you can either leave them or cut out the core of your zucchini.

Tips + Tricks

  • Cutting your zucchini too thick will leave you with a tough end product! Aim for around 1/8th of an inch thick. I like to use my mandolin slicer for even slicing. You could also use the slice function on your food processor or cut by hand.
  • After cooking or dehydrating these chips, make sure that you let them cool and then transfer them quickly to a zippered bag or airtight container to avoid soggy chips.

Exactly How to Make Everything Bagel Spiced Zucchini Chips

Step 1. Use a mandolin slicer or steady hands to slice your zucchini into thin (around 1/8 inch) rounds- I use the middle setting on my mandolin slicer. Thicker slices will have larger amounts of skin that end up being more tough.

Step 2. Spread your zucchini rounds onto the dehydrator sheets, air fryer tray, or parchment paper on a cookie sheet depending on your preferred method of cooking or drying them.

Step 3. Brush lightly with oil and sprinkle a liberal amount of everything bagel spice onto each chip! The measurements in this recipe are approximate depending on how heavily you spice the zucchini, how large your zucchini are, etc… Keep it simple!

Step 4. Dehydrator: Set the temperature from 125-135°F and allow the zucchini chips to dehydrate fro 8-10 hours. The chips should be very crispy and crack right in half when done.

Oven: Set your oven to 375°F. Line two baking sheets with parchment paper and place your prepared zucchini chips in a single layer overtop of the sheets. Bake for around 15-17 minutes or until they are crispy. If you are unsure, pop a chip out, let it cool, and snap it in half. If they are crunchy enough, they are done!

Set your air fryer to 375°F for 4-5 minutes, turn over, and cook for another 4-5 minutes or until they are crisp and snap in half easily. Be sure to check on the chips regularly while you are air frying and if they start to burn, remove them. Sprinkle a bit of extra everything bagel spice on the chips to make up for any that may have fallen off on the flip.

Store the cooled chips in an airtight container for 1-2 weeks.

How To Dehydrate Zucchini With + Without a Dehydrator

There are several ways to make these everything bagel spiced zucchini chips including in the oven, in the air fryer, and in the dehydrator!

Dehydrator

My favourite option! Place prepared zucchini onto your dehydrator racks, set the temperature to 135°F, and walk away for 8-10 hours. These chips are so quick to prep- I usually make them right before bed, pop them in the dehydrator, and they are ready in the morning!

Oven

Dehydrate: Many newer ovens have a dehydrator setting that allow you to dehydrate without cooking your foods! Set your oven from 125°F-135°F and walk away for around 8 hours. Cooking or dehydrating at a lower temperature preserves nutrients that would otherwise be lost in high heat settings.

Bake: Set your oven to 375°F. Line two baking sheets with parchment paper and place your prepared zucchini chips in a single layer overtop of the sheets. Bake for around 15-17 minutes or until they are crispy. If you are unsure, pop a chip out, let it cool, and snap it in half. If they are crunchy enough, they are done!

Air Fryer

Whether you have a Ninja air fryer, Cuisinart, or another brand, making zucchini chips in the air fryer is a fast way to achieve an evenly crisped + low carb snack!

Set your air fryer to 375°F for 4-5 minutes, turn over, and cook for another 4-5 minutes or until they are crisp and snap in half easily. Be sure to check on the chips regularly while you are air frying and if they start to burn, remove them. Sprinkle a bit of extra everything bagel spice on the chips to make up for any that may have fallen off on the flip.

Flavor Variations

Switch up your chips and use different spices and herbs…

Montreal Steak Spice– the perfect amount of spicy and salty, the zucchini chips soak up a lot of flavor from this seasoning. This flavor is popular in my house, I use it in my Venison Burgers, and on different cuts of meat like this Smoked Tri Tip Roast.

Sea Salt + Vinegar- Toss the zucchini chips in 1 tablespoon of vinegar and sprinkle with sea salt.

Ranch- Brush with oil then toss the zucchini chips in some powdered ranch mix before baking frying, or dehydrating.
